Cream of Broccoli Soup
1 cup margarine,chopped celery
1 small onion,finely chopped
1/3 cup all purpose flour,oxo chickenbouillon cubes crumbled
3 cups boiling water
1 package 300g frozen broccoli,thawed
2 cups milk
1/4 tsp nutmeg,pepper
garnish: grated chedder cheese
In a large saucepan,melt margarine;saute celery and onion 3-4 minutes.Stir in flour cook 1-2 minutes.Dissolve oxo cubes in boiling water.Gradually whisk bouillon into flour mixture;bring to a boil.Simmer over medium heat until slightly thickened; remove from heat. In a food processor or blender,process half the broccoli; chop remaining pieces.Add onion,celery and bouillon mixture to pureed broccoli.Process until smooth.Return to saucepan; add milk,spices and chopped broccoli. Reheat to serving temperature. Garnish with grated chesse,if desired. Makes 6 servings.
