Greek Rice
1 medium Carrot, chopped
1 Celery stalk, chopped
4 cups Chicken Broth
1/2 cup Mushrooms, chopped
1/4 Onion medium, chopped
1/4 tsp Paprika
2 cups Rice, long grain
Salt and pepper to taste
Boil rice following normal cooking directions but using fresh chicken broth instead of water. Add all vegetables and paprika to the boiling broth. Rice is ready when broth has disappeared and rice is tender.
