Chilled Cheesecake

1 1/4 cups fine wafer crumbs
1/2 cup butter melted
1 envelope unflavored gelatin
1/4 cup cold water
1 [4 oz 250 g]package of soft cream cheese
1 cup cottage cheese [sieved]
1 1/4 cups sugar
2 tsps vanilla
3 eggs seperated
1/2 pint [ 250 ml] whipping cream

Butter 9" spring form bunt
pan. Combine crumbs and butter press into bottom of pan. Chill sprinkle gelatin over cold water and let stand 5 min to soften disolve over hot water and let cool.

Beat cream cheese, cottage cheese,1 cup of sugar and vanilla until smooth. Add egg yolks one at a time beating well after each. Stir in gelatin, beat egg whites until frothy gradually beat in remaining sugar until stiff peaks form. whip cream intil softly stiff. Fold in egg whites and cream into other mixture. Pour into pan and chill until firm. Serve with fruit topping.
