Scalloped Potatoes
4 medium Potatoes, peeled and thinly sliced
3 tbsp Butter
1/2 cup Flour
1-1/2 cup Milk
1 Onion, sliced
1 cup Cheddar cheese, grated
1 tbsp Parsley
Salt & Pepper to taste
Combine flour and salt & pepper. Set aside. Grease a 9" round dish. Layer dish with potatoes, onions and half the flour. Layer more potatoes, more onions, more potatoes, more onions and remaining flour. Pour milk over potato dish. Add three 1 tbsp measures of butter on top. Sprinkle fresh parsley over top of dish. Bake in a 350 degree oven for 1 hour or until potatoes are tender and milk has thickened. Sprinkle cheddar cheese over top and return to oven for an additional 5 minutes or until cheese is melted.
