Chicken and Onion Rice Bake
6 Chicken pieces (or whole chicken cut up)
2 Tbsp Margine
1 Tbsp Olive oil
1 cup Converted white rice, uncooked
2 cups Mushrooms, fresh, sliced
1 package Onion soup mix
1-1/4 cup Reduced salt chicken broth
2 cups Water, boiling hot
Brown chicken in margarine and olive oil in a frying pan. Spread rice on the bottom of a greased roasting pan. Place browned chicken over rice. Pour boiling water and chicken broth over chicken and rice. Add mushrooms and sprinkle package of onion soup mix. Add salt and pepper to taste. Cover roasting pan and bake at 350 degrees for 45 minutes or until tender. Remove lid and bake 10-15 minutes more to brown. Make sure chicken is fully cooked. Serves well with green beans.
