Whipped Potato Casserole
10 medium Potatoes
¼ cup Butter
8 oz (250 g) Cream Cheese, brick style
1 cup Sour Cream
½ tsp Salt
½ tsp Pepper
2 tbsp Butter, Melted
¼ cup Bread Crumbs, dry
Lightly coat an 8 cup (2 L) oven proof casserole dish with cooking oil. Set aside. Mash potatoes with butter; add cream cheese, sour cream, salt and pepper. Whip well. Spoon mixture into prepared casserole dish. Combine melted butter and dry bread crumbs, sprinkle over top of casserole. Bake at 350 degrees for 20 to 30 minutes.
