Lindsay & James’ Pizza Dough
1 pkg Active Dry Yeast (2¼ tsp)
1¼ cups Warm Water (110—115 degrees)
3½ – 4 cups Sifted Flour, divided
½ tsp Salt
½ tsp Sugar
3 tbsp Olive Oil
Sprinkle yeast over warm water. Stir to dissolve. Add 2 cups flour, salt and sugar. Beat thoroughly then stir in remaining flour. Turn onto lightly floured board and kneed into smooth elastic, about 10 minutes, adding more flour as needed to keep dough from sticking. Place in greased bowl and turn dough over to grease top. Cover and let rise in warm place, until doubled in size, about 30 minutes. Punch down, turn onto board and kneed just long enough to force out bubbles. Divide in half. Roll out each half, pat and stretch out over an oiled 12” round pizza pan. Add your favourite pizza toppings and cheese. Brush oil around edges of crust. Bake pizza in a 450 degree oven about 15 minutes or until cheese topping has melted and crust edges have browned.
